So I have this vegan week going on just for experience and I am going to share some recipes I have tried or invented. Cannot normally eat egg due to allergy so without that life is pretty easy but without milk feels almost impossible. Drinking now this oat milk with coffee that tastes exactly like the whole breakfast in one cup: coffee and porridge in a liquid form. Also missing cheese like crazy. Anyway, here is the first recipe, vegan mud cake. It is really easy to make, it takes altogether about 30 minutes including the oven time. Original recipe is from here , but I modified it a little bit. You need: 1 dl of coffee 1 dl of cocoa powder 1 dl of milk-free margarine 2 dl of sugar 2 dl of soya cream 2 dl of flour 1 teaspoon of baking powder 1 teaspoon of egg-replacer thing (optional I think) 1/2 teaspoon of salt 1 teaspoon of vanilla sugar About 100-120 gr milk-free chocolate a little bit oil for the tray Some tray to put the cake in You'll do: Put some oil to the tray you want to put the cake in, to make sure it does not stuck in it. Turn oven to 200 C. Mix soya cream, cocoa powder, coffee, sugar, salt and vanilla sugar in a bowl. Melt the margarine in microwave and pour it in. Melt chocolate a little bit in microwave and mix it in. Some of the chocolate can be in little pieces still and will melt in the oven. Mix baking powder, egg-replacer and flours and pour everything together. Pour it in the tray and put in the oven for about 20 minutes.
